Cooking is one of my biggest daily struggles! I'm not an expert cook or even near one, but I have to feed my family every day. So coming up with 1-2 different healthy meals a day is a huge challenge for me. Especially since my husband and toddler are picky eaters. My dream is to become an expert cook, and cook everything from scratch by the time my kids can criticize my cooking. My husband unfortunately has to bear through it all, but he is a good sport and also cooks for us sometimes.
Even though Pinterest exists and I own a few recipe books, I have been too lazy to try new healthy recipes. Maybe because I've been pregnant. So my family has had to eat the handful of dishes I know how to make, over and over again. But I'm getting bored of my dishes too and the fact they are not as healthy as I would like them to be. That is why I started this blog, so I can remind myself and push myself to cook healthier for my family. Hopefully next recipe I share will be a new one that I haven't tried before.
However, I would like to share one of my favorite healthy recipes that my whole family enjoys. Maybe you've seen it before on Pinterest, it's so easy to make in a crockpot, and deliciously filling!
Chicken Chili in the Crock Pot
- Natural Chicken breasts (preferably hormone free antibiotic free)
-No Salt added kernel corn
-No Salt added Diced Tomato
-No Salt added dark red Kidney beans or black beans
-Natural Ranch powder dressing
-Natural Cream Cheese
Throw all the above ingredients into the crockpot on high for 4hours or on Low for 8 hours. Shred the chicken with a spoon. Serve over cooked Rice of your choice (We prefer Jasmine or Brown Rice) with shredded Cheese and Sour Cream on top. And Eat with Whole Wheat or Multigrain Tortilla Chips instead of utensils!
